Experience the Rich Smoked Delights of Isaac’s BBQ in Jungmannova!

Located just off Národní třída on Jungmannova Street in Prague, a fresh new restaurant is capturing attention — and it’s the enticing aroma of smoked meats that really draws you in.

Isaac’s BBQ marks the newest endeavor from the individual who played a key role in bringing genuine American barbecue flavors to the street food scene in Prague.

Isaac Starobin is well-versed in the art of grilling. He has been serving American barbecue delights through his Dirty Dog BBQ stand at Manifesto Market for the past decade.

His skills were sharpened during his time in the culinary environments of New York and Berlin. However, Isaac’s BBQ, which opened its doors on January 21, 2025, accommodating approximately 50 guests, represents his first standalone restaurant — a long-cherished aspiration brought to life after years of cultivating a loyal customer base at Manifesto.

During the initial evenings, all reservations were filled, with many familiar faces from the Dirty Dog era coming out to support Isaac in this exciting new venture. He views Prague’s culinary landscape as a space that still has potential for expansion — and his aim is to astonish patrons while aiming for perfection in every dish.

The narrative surrounding the restaurant’s location is almost poetic. Six years ago, Isaac stepped into the space and instantly felt a connection, thinking: this is where I must open my restaurant. After more than a year of searching, the spot finally became available. The previous tenant was a minimalist Asian restaurant that was, in Isaac’s words, so stark it reminded him of a dental clinic.

Isaac then dedicated six months to transforming the space into a reflection of his personality. Now, the restaurant showcases exposed brick walls, a glowing neon sign that proclaims “Don’t Stop Meat Now,” and what Isaac describes as a dash of “sexy rustic” flair. An iron cow skull adorns the wall above the extensive bar, where patrons can enjoy drinks while listening to classic tunes from American rock history.

The menu delivers a similar vibe, featuring authentic American BBQ with meats slow-smoked for hours at low temperatures. Yet, it doesn’t strictly adhere to tradition: Mexican and Asian influences are also present. Nonetheless, the tender brisket, succulent picanha, and crispy fried chicken served in rich buttery buns take center stage.

“Fusion, not confusion,” Isaac asserts, welcoming inspiration from around the globe. He references chefs like Zach Palaccio, who creatively melds barbecue with Malaysian ingredients, and fellow chef Adam Perry Lang. Being anchored in tradition while daring to experiment is fundamental to his philosophy: “I treasure tradition. However, there’s always room for unexpected delights — for progress,” he states.

All the beef, pork, and chicken served are sourced from Czech producer Maso Klouda. Aside from a few herbs, all other ingredients are locally sourced. Isaac is very clear about his intentions: he is not focused on being the cheapest option available.

Leaving the street food sector did not mean abandoning it — Dirty Dog is thriving at Manifesto Market. However, having a permanent location provides fewer restrictions, more opportunities for culinary experimentation, and the freedom to set menu prices without the constraints typically associated with street food.

Isaac is also eager to reshape public perceptions of American cuisine — emphasizing that it’s much more than just burgers and fries. Still, he confesses that when nostalgia strikes, nothing beats a classic cheeseburger paired with a Budweiser. That’s why you’ll find selections like Coors Light, Miller Genuine Draft, and other traditional American favorites featured on the menu — the ultimate comfort food for expats or anyone who has grown weary of goulash during their stay.
